The amount of letters that will fit on a page varies widely depending on the size of the font you choose. For large amounts of text choose smaller sized letters or your design will likely end up too large. You can always use your back arrow to come back and try different fonts, etc.
A full size caption page on standard letter size paper is about 130x150 stitches (9"x11" on 14ct). See Printing Help For more info on printing and page setup. (*page widths greater than 130 stitches require printing in 'Landscape mode', and/or over-size paper)
